

Anticipating the weekend treat of waffles topped with homemade preserves is a tradition in my family. This time, we are using fresh nectarines for the preserves. I prefer to simmer down fresh fruits, especially when they are in season. If you are unsure about canning preserves, they can be easily frozen instead. I opt not to add extra sugar to my preserves, opting for fruits like peaches, nectarines, strawberries, or apricots to bring a tart contrast to my waffles.
To make the preserves, I chop the preferred fruit into small pieces and simmer it over low heat until it turns soft. You will notice the juices being released, creating a delightful topping :).
Why do I refer to this as a family affair? My children eagerly take turns mixing and preparing the waffles. Today, each of the 4 kids had a specific role. The youngest handled the egg whites, the second one mixed the batter, the oldest operated the waffle iron, and the third one simply relished devouring them.
Recipe
Waffle Batter
Flour- 2.5 cups
GF option1: This makes lighter more airy waffles
GF option 2: not as fluffy, but still a great waffle!
Oats- 1/4 cup
These are what I use
Baking Powder- 2 tsp
Vanilla- 1 tsp
Avocado Oil- 1/2 cup
I also substitute with this sometimes
Milk- 2 cups
Egg separated- 3
Directions
Combine all ingredients in a bowl, excluding the eggs.
Transfer the egg whites to a separate bowl, and add the yolks to the bowl containing the other ingredients.
Whisk the egg whites until stiff peaks form.
Blend all other ingredients thoroughly using a mixer.
Gently fold in the egg whites.
Cooking :)
Place in your waffle iron.
